Mutanjan Pakistan is a heaven for foodies with a sweet tooth of traditional sweet dishes. Mutanjan is one of the many darlings of dessert lovers widely eaten all over Pakistan. Mutanjan is a dish of Pakistani origin but its roots date back to the time of the Mughal Empire. Mutanjan was a favorite dish of Emperor Shahjahan and the dish was often prepared for his royal banquet, back in Mughal era. Mutanjan is a variant of Zarda, with a difference of color only i.e. the Zarda was a dish of sweet boiled rice with mostly yellow in color whereas Mutanjan is assorted with a variety of different colors. Both the dishes are prepared with boiled rice and adding them with milk, sugar and vibrant food colors which are a representation of festivity and joy. The rice is then further flavored with dry fruits like almonds, walnuts, pistachios, cashews and raisins. Cardamoms and saffron are also added which provide the cuisine with a beautiful aroma. Sometimes khoya and rasgullay are also added for the purpose of adding further sweetness to the dish. Ingredients for Muntanjan:
- 1 kg Rice
- 700 gm Sugar
- 3 cup Milk
- 100 gm Milk solids (Khoya)
- 100 gm Rasogolla
- 100 gm Green Ashrafi
- 1/2 cup Oil
- 100 gm Red Ashrafi
- 20 gm Cashew nuts
- 20 gm Pistachios
- 20 gm Almond
- 10 gm Coconut
- 4 Small cardamom
- 10 gm Raisins
- 1/4 tsp Red green and yellow color
Directions:
- Pour water in a bowl then add salt, cooking oil and boil the rice.
- Now add Rice, Sugar Milk, Milk solids (Khoya), Rasogolla, Ashrafi Green, Oil, Ashrafi Red, Cashew nut, Pistachio, Almond, Coconut, Small cardamom, Raisins, Red green and yellow color.
- Leave it on Dum for 15-20 minutes on a low flame.
- Delicious Muntanjan recipe is now ready to serve. Cooking time: 35 minutes
