Special Mutanjan Rice Recipe in Urdu & English

Special Mutanjan Rice Recipe is one of the many sweethearts of traditional dessert recipe lovers which are eaten with great delight all over the country. Mutanjan rice recipe originated from Persia and was brought to the Indian subcontinent by the chefs of the royal banquet of the Mughal Dynasty. Mutanjan is theorized to be a beloved dish of Mughal Emperor Shahjahan and thus Mutanjan was often served at his royal banquet, back in Mughal era. Mutanjan is often confused with another rice dish known as the Zarda. The only difference between the two is of color i.e. the Zarda recipe is a dish prepared by boiling sweet rice in a single color, mostly yellow or orange whereas Special Mutanjan recipe is assorted with a variety of food colors. Both the dishes are made with boiled rice with milk, sugar and vibrant food colors which often represent festivity and joy. In Mutanjan recipe, rice is further flavored with dry fruits and nuts like almonds, walnuts, pistachios, cashews, and raisins. Cardamoms and saffron are added to the recipe to provide it with a beautiful aroma. Often garnished with khoya and rasgullay, Mutanjan is consumed all over the Indian Subcontinent and Arabian Peninsula. Ingredients:
-600g Guard Rice
-3tbsp Desi Ghee
-Half cup Milk
-6 Green Cardamom
-Half cup Sugar
-20g Almond
-20g Cashew
-20g Pistachio
-20g Copra
-20g Raisin
-150g Khoya
-200g Rasgulla (small)
-25g Totti Frutti (Red)
-25g Totti Frutti (Green)
Cooking Method:
1- In a bowl, add and soak the rice for one and half hours, then boil it.
2- Now, in a pan, add desi ghee, milk, green cardamom, sugar, almond, cashew, pistachio, Copra, raisin, boiled rice and cook for 3-4 minutes.
3- Now, add khoya, small rasgulla, red totti frutti, green totti frutti and simmer for 4 minutes.
4- Now, add green color, red color, yellow color and then simmer again for 3-4 minutes.
Your sweet Mutajan now ready to serve

اجزاء چاول(گارڈ) چھ سو گرام دیسی گھی تین کھا نے کے چمچ دودھ آدھا کپ چھوٹی اِلائچی چھ عدد چینی آدھا کپ بادام بیس گرام کاجو بیس گرام پستہ بیس گرام کھوپرا بیس گرام کشمش بیس گرام کھویا ڈیڑھ سو گرام چھوٹے رس گُلے دو سو گرام لال اشرفی پچیس گرام سبز اشرفی پچیس گرام سبز رنگ ایک چوتھائی چائے کا چمچ لال رنگ ایک چوتھائی چائے کا چمچ پیلا رنگ ایک چوتھائی چائے کا چمچ ترکیب ۔ایک برتن میں چاول(گارڈ) لیں اور ڈیڑھ گھنٹہ بھِگوکر اُبا ل لیں ۔ ۔اب ایک پین میں دیسی گھی لیں اور اس میں دودھ ،چھوٹی اِلائچی ،چینی ،بادام ،کوجو ،پستہ ،کھوپرا، کشمش اور اُبلے ہوئے چاول ڈا ل کر تین سے چار منٹ تک پکالیں ۔ ۔اب اس میں کھویا ،چھوٹے رس گلے ،لال اشرفی ،سبز اشرفی ڈال کر چار منٹ تک دم دیں ۔ ۔اب دودھ میں سبز رنگ ،لال رنگ اور پیلا رنگ گھول کر ڈال دیں اور تین سے چار منٹ تک دم پر رکھ دیں ۔ آپکا مزیدار متنجن تیار ہے ۔ پکا نے کا وقت: ایک گھنٹہ افراد:تین
